Lentil Sloppy Joe Recipe

Lentils are a majorly underrated food–in part because delicious recipes for lentil dishes can be difficult to find! While many delicious lentil soup recipes populate the internet, this Lentil Sloppy Joe recipe is great for the summertime, when barbeques and sandwiches are on the menu. Lentils are a legume, and they have a vast array of health benefits. Lentils are high in protein (12g per serving), contain essential amino acids, minerals, and fiber. Plus, they are anti-inflammatory and antimicrobial (Alexander et al, 2024).

Not only does this recipe have many health benefits, but it also won’t break the bank! It uses common spices and condiments to create the sauce, and lentils are a budget-friendly protein source. Find a green pepper and hamburger buns at your local farmers market to support local producers. (Bonus–this recipe is vegan!)

Equipment needed: stovetop, pot, spoon, measuring cups

Ingredients

  • 1 cup dry lentils
  • 1/4 cup ketchup
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 2 TBSP brown sugar
  • 1 tsp mustard
  • 1 TBSP apple cider vinegar (or any vinegar)
  • 1 cup tomato sauce
  • 1 green pepper, chopped (optional)
  • Hamburger buns

Directions

  1. Bring lentils and 2 cups of water to a boil. 
  2. Chop one green pepper and add to the lentils.
  3. Lower heat and simmer for 20 minutes.
  4. Remove from heat and drain any excess water.
  5. Add ketchup, spices, mustard, vinegar, brown sugar, tomato sauce, and green pepper (if using) to lentils. Stir and cook on low heat until the sauce thickens, about 15 minutes.
  6. Serve on a bun.
